Katie Nikah
- Senior Research Program Coordinator
- Nutritional Sciences
Katie holds a Master’s degree in Public Health from the University of Texas and has been trying to make the world a healthier place one community at a time for over a decade. Her work has taken her from the dusty roads of Paraguay to the bustling corridors of Washington, DC, tackling public health challenges and conducting research since 2012. Katie spent five years managing the TX Sprouts program and now steers the EdEN Lab at UT, led by the fabulous Dr. Jaimie Davis.
She dreams of a world where every person has the chance to live a healthy, happy life and firmly believes that teaching kids outdoors not only connects them to nature but also sparks their adventurous spirits—because let’s face it, the great outdoors beats worksheets any day.
When she’s not busy saving the world, Katie channels her creativity into pottery (her mugs are both functional and fabulous), all while wrangling three energetic young boys with her equally adventurous partner, Shawn. It’s a life filled with dirt (garden and otherwise), clay, and a healthy dose of chaos—but she wouldn’t have it any other way.
