Biography

She has had many leadership positions, including serving as Chair of Faculty Women at UT Austin four times. She has been Chair of the USA Association of Nutrition Departments and Programs and the Chair for the Department of Human Ecology. She has served as head of the UT Austin Nutrient Division in addition to serving as director for Research Interest Sections of the American Society of Nutrition. She has served as the UT Representative for Leadership Texas and a Media Spokesperson for Wheat Industry Council. Her food science textbook and laboratory manual have been used in over 100 colleges and university for four editions. Currently, she is the director of International Nutrition. In addition, she has been honored to serve on the Food Advisory Committee, U.S. Food and Drug Administration; Scientific Policy Committee, Federation of American Societies for Experimental Biology Board; and as President, International Society of Trace Element Research in Humans (www.isterh.com).

She has led the Nutritional Sciences study abroad programs that study nutrition, food, and health since 2006. In 2015 students went to Sicily. In previous years they studied in Guadalajara, México; Córdoba, Argentina; Seville, Spain; Syracuse (Sicily), Italy; Singapore; Vietnam; Cape Town and Stellenbosch, South Africa. 

Research

Dr. Freeland-Graves has focused on obesity, trace elements and food science in her academic career. Her food science textbook was used in over 100 colleges and universities for four editions. Freeland-Graves is the recipient of numerous grants involving obesity, including validation of body composition and methods for detection of obesity. She has been involved with the genetic relationships of obesity with cardiovascular risk factors, liver function markers, and insulin resistance. She also has explored the nutritional, environmental and psychological and social influences on weight retention in minority, low-income women after childbirth, as well as the biological and behavioral responses of both mothers and their children to nutrition and physical activity interventions. Her work in manganese requirements was used in the current dietary recommendations for the trace element, manganese, and the development of reference doses (toxicity levels). Other research in zinc involves its relationship to metabolic syndrome, bioavailability, and taste acuity.
