Biography
Diane Papillion, MPH, RDN is a Professor of Instruction and Director of the Didactic Program in Dietetics (DPD) in the Department of Nutritional Sciences at The University of Texas at Austin. A registered dietitian with expertise in community nutrition, sustainable food systems, and food and nutrition services management, she has been a member of the UT Austin faculty since 2012. She teaches Foodservice Systems Management (NTR 334/234L), Community Nutrition (NTR 332), Standards, Ethics, and Credentialing for Dietetic Practice (NTR 162), and Community Nutrition in the online Master of Science in Nutritional Sciences (MSNS) program. Her teaching emphasizes the connections between nutrition, food systems, public health, and social equity.
Her research explores community-based food systems and their role in public health and well-being, including work as co-principal investigator on a UT-supported project examining food systems and land management strategies in the Chihuahuan Desert region. Through her teaching, scholarship, and service, she works to advance understanding of the relationships among food, culture, environment, and community well-being.
